  11. Prepare 4 bamboo skewers, soaked
  12. Get garlic salt
  13. Prepare Frying
  14. Prepare 1 tbsp lard
  15. Prepare 50 ml vegetable oil
  16. Prepare 1 tbsp butter

Steps to make Chicken Two Ways:
  1. Prepare the chicken.
  2. Mix all the marinade ingredients well.
  3. Pour the marinade over the chicken, I didn't actually measure the ingredients so the above are just rough estimates but you can use your own measurements.
  4. Mix the chicken with the marinade well.
  5. Marinade for at least 3-4 hours in advance, preferably overnight. Cover and set in the fridge.
  6. GRILLNG: When its time to cook, preheat the grill.
  7. Soak you skewers.
  8. Prepare your onion, then sprinkle some garlic salt over the onions.
  9. Add one piece of chicken to the skewer then add a piece of onion. Continue this process until all 4 skewers are completed.
  10. Transfer to the preheated grill and cook for 15-20 minutes or until cooked through. Turn the skewers once at half way point. Cook for longer if needed. I had to cook mine an extra 10-15 minutes as my grill is not working properly.
  11. You should be left with about this much meat.
  12. In a heavy based saucepan add the lard, butter and oil and bring to the heat.
  13. Place a good amount of flour in a shallow dish.
  14. Piece by piece coat the chicken in thr flour and add to the pan gently.
  15. Fry the pieces for about 10-15 minutes or until ready.
  16. When cooked place on a plate lined with kitchen towels to absorb any extra grease.
  17. Try to cook the fried chicken last as the longer you leave it cooked the softer the batter will become.
