- Take 2 cups All purpose flour or Maida
- Take 1 cup Mango pulp (use good variety of mango)
- Get 1 cup regular Yoghurt
- Make ready 3/4 th cup cup Sugar
- Make ready 1/2 cup Olive oil or Vegetable oil
- Make ready 2 teaspoon Baking powder
- Take 1/4 th teaspoon Baking soda
- Take 1/4 th cup Condensed milk
- Prepare 1 teaspoon vanilla or 1/2 teaspoon cardamom powder(use any one)
- Prepare 1-2 tablespoon Flax seeds
- Make ready 3-4 tablespoon milk(optional)
These mango & coconut muffins are totally vegan and have a bright, fresh flavor from mango, lime, coconut milk, and coconut oil. To help them rise, I added lime juice, and I used flax to bind them together - although these can also be made with an egg if you do not have flax, see the recipe below. Mango lassi is a sweet lassi (of course) and is prepared by blending yogurt, mango, milk and can either be with or without sugar. I guess it depends more on how sweet the mango is.
Steps to make Mango Lassi Muffins with FlaxSeeds(Without egg):
- Sieve together All purpose flour, baking powder and baking soda. Keep aside.
- In a big mixing bowl add 1 cup of yoghurt(use room temperature yoghurt).
- Add 1 cup of mango pulp, 1/2 cup of oil, 3/4 th cup Sugar and vanilla essence. I use vanilla, you can add cardamom powder in place of vanilla.
- Blend everything well with a hand blender.
- Add 1/4 th cup of condensed milk.
- Mix again to incorporate everything well.
- Now add the dry ingredients(Maida mix) to the wet mixture and mix with a spatula or spoon. No need to use blender now.
- The batter will be thick in consistency. If you feel that batter is too thick add 3-4 tablespoon of milk to adjust.
- Pre heat oven at 180 degree Centigrade for 10 minutes.
- Line a muffin tray with cup cake liners.
- Place 2 tablespoon of the batter to each mould.
- Tap the tray 2-3 times to spread the batter evenly.
- Sprinkle some flax seeds on the top of the muffins.
- Bake them for about 20 minutes or till a toothpick inserted comes out clean.
- Keep them aside for 10 minutes to cool.
- Take out the muffins from the muffin tin and keep in a serving plate.
- At the time of serving sprinkle some icing sugar and enjoy this mango lassi flavored muffins.
- Note: To make mango pulp, cut mango in small pieces and blend in a blender. I use readymade mango pulp.
