The ingredients needed to make Spanish chicken and Chorizo:
  1. Prepare 6 medium to large potatoes, skin on coarsely chopped
  2. Prepare 1 whole fresh lemon
  3. Get 1 preserved salted lemon (Use another fresh lemon instead if you don't have preserved lemons)
  4. Make ready water
  5. Take garlic salt
  6. Get 1 large chicken, can also use pieces
  7. Make ready 200 grams chorizo, sliced
  8. Take olive oil, extra virgin
  9. Get 3 garlic cloves coursely chopped
  10. Make ready 1 large onion, cut into large pieces
  11. Take cracked black pepper

Chorizo: You can use either Spanish or Mexican chorizo to make the chicken and chorizo stew. There is a difference between Spanish and Mexican chorizo, in case you want to know that. They are definitely not the same thing and it is usually recommended not to use the two sorts of chorizo interchangeable. Remove the chicken from the pan and put on a plate to one side (it won't be fully cooked at this point).

Instructions to make Spanish chicken and Chorizo:
  1. Preheat oven to 220 c.
  2. In a large pot add the potatoes, water, fresh lemon (prick with a knife a few times) and garlic salt and bring to the boil for 5 minutes.
  3. In a tray add some olive oil and heat in the oven.
  4. Drain well the potatoes when done.
  5. Next prepare your chicken. Stuff the chicken with the preserved lemon, fresh lemon and a handful of chorizo. Then rub with some olive oil and garlic salt.
  6. Then layer the potatoes in tray, sprinkle with salt, add the onions and garlic and top with the chicken, and chorizo pieces. Sprinkle with some cracked black pepper.
  7. Transfer to the oven.
  8. Bake for 1 hour and 20 minutes or until fully cooked through.
  9. Remove the chicken and let it rest, continue to cook the potatoes until they crisp up. About another 20 minutes or so.

In the same pan, add the chorizo. Place the rice in a deep bowl and cover with water. In a small bowl, mix the spices, salt and pepper, to make the spice rub. Put the chicken breasts into a large casserole dish and sprinkle with the garlic and paprika. Add all the chopped vegetables and chorizo and pour over the tomatoes.
