- Add half of the water, stock cube and bring to the boil.

- Add the vegatables, salt, chilli and pepper and simmer for about 15 minutes.
- Add the rest of the water and simmer for another 10 minutes
- Check your seasoning, add more chilli, salt and pepper if required and serve.
Add the stock and simmer for five minutes. Remove from the heat and allow to cool slightly. Rich, hearty broth, crunchy bread and gooey cheese make this bowl of french onion and leek soup pure comfort food goodness. This has to be one of my own top of the pops favourites and has proven to be one of my most popular recipes with everyone over the years. The chilled version of this soup is a classic vichyssoise.
