  1. Soak chole in water overnight
  2. Put chole, water, tea bags and 1 inch cut ginger in a cooker and boil till chole turn soft
  3. Mix all the ingredients for Bhature in a bowl. Add lukewarm water, little at a time to knead the dough. Knead for 10 minutes with your hands until smooth dough is formed.Apply little oil on top of the dough, and then keep in a warm place for at least 2 hour.
  4. In a small bowl, mix 5 tsp water with red chilli powder, coriander powder, cumin powder, turmeric powder, amchoor powder, ginger garlic paste and pepper
  5. Heat oil in a kadhai. Add jeera and cut green chillies and onions. Cook for 5 mins.
  6. Add tomatoes and masala paste. Cook till it starts releasing oil in the kadhai
  7. Add chole, garam masala and water. Cook for 10 more minutes.
  8. For bhatura - divide dough into 14-15 equal parts, let the dough balls rest for 5 minutes. Meanwhile heat oil in a kadai on medium-high heat. Oil should be sufficiently hot, if you drop a piece of dough into the oil it should come up briskly. That’s when the oil is ready to fry the bhatura. Roll each dough into circle or oval shape, it should neither be too thick nor thin.
  9. Add the rolled bhatura to hot oil and press gently with a ladle, until it starts to puff.Fry both the sides until brown.
  10. Serve bhatura with chole
