Amritsari Chole is a traditional recipe from Amritsar that is made using freshly ground chole masala. A freshly ground masala in the curry always makes it better and delicious. The base of the curry has tomato and onions which are flavored with the freshly ground masala and other everyday spices. To make this delicious Amritsari Chole at home, you can start with preparing chickpeas.

Steps to make Amritsari choley:
  1. Drain the water from the soaked channa & put them in a cooker.In a muslin cloth, put 1 tsp tea leaves, cinnamon stick, cardamoms & cloves. Make a knot & tie them tightly.
  2. Put it in the cooker with channas.Add enough water which can cover the channas.Add soda.
  3. Cover the cooker with lid & give 5 -6 whistles. Switch off the gas & let it cool down.Now Steain the water through the stainer & keep it aside.
  4. In a masala grinder,add pomegranate seeds,cumin seeds,rock salt & kasuri methi. Grind it for 2 -3 times.
  5. Add red degi mirch,turmeric powder,garam masala & coriander powder. Again grind it.
  6. Heat oil in a non stick pan.Add grinded onions & ginger garlic paste. Cook till they become translucent.
  7. Now add grinded tomatoes & 1 tsp salt.Cover with lid.
  8. Cook till oil spreads from corners & add 1 tsp of homemade masala Cover with lid again.
  9. Cook till masala mix with onion tomato masala.Now add boiled channas & the rest of the water.
  10. Mix well & cover with lid.Cook till water absorbs.
  11. Heat pure ghee in a pan & add split garlic cloves & green chillies.cook till they become golden brown.
  12. Pour this tadka on the cooked channas.
  13. Serve hot with tandoori aloo naan & butter.

Drain again and transfer to a deep pan. Add some water, black tea bags and cardamoms. Super popular almost all over the country and served and enjoyed at roadside dhabas and restaurants with equal gusto. Amritsari chole go best with kulcha or bhature but you can serve them with any of the flat Indian breads or basmati rice. Notes *For regular North Indian cooking, I use sunflower oil; you can use other vegetable cooking oils like canola, olive pomace etc.
