- Wash and slice courgette in half, remove the seeds with a spoon. Peel potatoes, grate using cheese grater into a bowl. Grate courgette and mix
- Add salt, pepper and herbs, I used dried sage. Using your hands, squeeze as much water out of the mixture as possible. Heat oil and knob or two of butter in a pan. Using pastry ring, add the mixture or make one big one
- Press down firmly using a pan lid and cook on medium turning once or twice. Serve when golden brown :)
Quick, filling and meat-free, it goes well with a leafy green salad. Grate the potato and carrot into a sieve. Sprinkle the flour and lots of seasoning on top and shake the sieve so it coats all the veg. A potato rosti, started on the stove and finished in the oven, stands in for high-maintenance fried latkes; celery root imparts a bright flavor. Return rosti to skillet, golden side up; press gently to flatten.
