  1. Take 300 mls Good Quality Olive Oil
  2. Take 5 Medium Lemons

This lemon scented olive oil is so easy to make! Using a vegetable peeler, remove the zest in large strips, being careful not get any of the white pitch. Pour the olive oil into a saucepan and add the lemon peels. Over a medium heat, bring the oil to a simmer, stirring.

Steps to make Lemon Enthused Olive Oil:
  1. Wash and dry completely the lemons. Using a sharp knife or potatoe peeler, remove just the yellow part of the lemons. Do NOT use a zester, as you lose a lot of the flavour in the “ spray”.
  2. Pour over the Olive Oil. Warm very very gently, do not boil or even let it bubble. Once warmed, leave the peel for at least 20-30 minutes, or until cold.
  3. Sieve and drain. Put into a clean, dry container.(I re-used the bottle the Oil came from.) Use within 6 months. Enjoy!
