I use a combination of mozzarella cheese and Parmesan along with fresh basil leaves, green onion, fresh oregano leaves, zucchini slices. Sprinkle evenly with salt and pepper. Fold edges of dough over zucchini and tomato (dough won't completely cover the zucchini and tomato).

Instructions to make Zucchini Flan with Fresh Basil:
  1. Preheat oven to 190°C/375°F.
  2. Grill zucchini slices in a grill pan or saute in a frying pan until slightly soft. If needed you can pour in a little water or broth after a few minutes to help "steam" them. Sprinkle with salt.
  3. Whisk together eggs and milk. Then mix in the salt, nutmeg, pepper, fresh basil leaves and dill/thyme.
  4. Lightly grease a baking dish with oil and layout the zucchini and onion.
  5. Distribute the cheese, if using, over the zucchini (I used cream cheese because that's all I had…)
  6. Pour over the egg mixture
  7. Bake at 190°C/375°F for 25-30 minutes. The center will still be a little jiggly when done. Enjoy warm :)

Drizzle with oil; sprinkle with basil. Drain and spread zucchini out to cool on a towel. Season lightly with salt and pepper. Scatter cheese over zucchini, then pour in custard. Remove from oven and spread ricotta mixture over pastry, staying within border.
