  3. Keep on the boil until reduce by half. It should be a reasonably thick consistency (jam like). Once at the desired consistency take off the heat and allow to cool for 10-15 mins.
  4. There is lots of information about sterilising and sealing Jam jars on the web. Without sterilisation and sealing I find the jam will last in the fridge for about 3 weeks. Add the Jam from the pan to the jam jars. Leave to cool. Once cool keep in the fridge.

Making and canning your own Plum jam, Damson jam, Pluot, "Dinosaur Egg" plums, Gage jam or Nectarine jam is so easy. Once plum jam looks thick enough, test it by placing about a teaspoon of it on one of the frozen spoons. Pull it out and poke it with your finger. Plum jam is another great way to turn those wonderfully plump, flavorful and juicy plums into something delicious that you can enjoy all year long. It's delicious added to cakes, in muffins.
