  1. Make ready 1 slice Swiss/Provolone/Gruyere cheese

Sprinkle a bit of shredded cheddar cheese over each puff pastry square, then crack one egg into the indent of each square. To make choux pastry, you actually cook the flour in water and butter to form a paste, then beat in the eggs at the end.   2. In a large enough ramiken, melt and spread the butter.
  3. Put the cheese slice in the ramiken.
  4. Beat the eggs, cream and salt and pour into the ramiken.
  5. Sprinkle the parmasan cheese and toss it in the oven.
  6. Bake for 40min or when the egg is puffed up. Put it under the broiler for about a minute or until golden brown.
  7. Enjoy with a warm buttered croissant.

Open puff pastry up on a parchment or silicone lined baking sheet. Cut about a ½ inch strip off of each side and place strips on top of the new edges of the pastry to form a raised edge. Whisk together the eggs, then add the cheese. Combine the flour, baking powder and salt and pepper and whisk into the egg mixture. Remove the puff pastry from the oven, sprinkle the cheese in the centers then crack an egg into each circle.
