Instructions to make Basonti pulav:
  1. Wash rice and rinse well
  2. Mix ghee,sugar,nuts and raisins and keep aside
  3. Now heat oil and temper bay leaf and whole garam masala
  4. Add the rice and saute well
  5. Add peas,salt and sugar and mix
  6. Now pour warm water double in quantity of rice(1:2) and yellow food colour
  7. Let it boil till rice is soft
  8. Now garnish with ghee and serve with "kosha mangsho"

It has a rich touch to it with the addition of raisins and cashew nuts along with the goodness of cinnamon and cardamom. Coconut Milk Pulao Basanti, literally means a shade of yellow, it is the color of spring. The basanti pulao is slightly sweet in taste because of the use of sugar in it and so it goes well with very hot and spicy curries.
