  1. Prepare 2 cups finely grated Bottle gourd/Lauki
  2. Take 3/4 cup dessicated Coconut
  3. Prepare 1/3 cup or more sugar adjust
  4. Take 1/3 cup milk
  5. Get 3-4 tbsp ghee
  6. Take 3-4 tbsp chopped nuts
  7. Prepare 1/4 teaspoon cardamom powder
  8. Make ready as needed Green food colouring optional
  9. Get 1/4 cup dessicated Coconut for rolling optional

The nariyal ladoos that we get are so juicy, yummy and soft that they simply melt in your mouth. Lauki or bottle gourd is a vegetable which is eaten in many of the families in the days of fasting. Steps to make Lauki Nariyal Ladoos:
  1. Heat ghee in deep bottom vessel
  2. Add grated lauki and mix well
  3. Saute Lauki for 3-4 minutes
  4. Add milk and mix well. Cook for 4-5 minutes
  5. Add sugar and mix well. Cook for 4-5 minutes
  6. Add food colouring and mix well. This is optional. This gives beautiful green colour to Laddu
  7. Add cardamom and mix well. Cook until mixture becomes dry
  8. Allow mixture to cool completely
  9. Add nuts to mixture
  10. Add desiccated Coconut 2-3 tbsp at a time and mix well. Do not add 3/4 cup in single go. Add as required
  11. Grease palms and shape mixture into Laddos. Roll over desiccated Coconut, this is optional but it gives beautiful look and additional taste to Ladoos. Serve cold
