Serve it hot with steamed rice to initiate the meal. Now fry the bitter gourd pieces and keep aside them too. No lump should be in the mixture. So do not ignore this vegetable because of its bitter taste.
Instructions to make Sukto/mix vegetable curry with bitter gourd:
- Cut the vegetables into long pieces 1-2 inches.
- Fry bitter gourd untill tender and little crispy.
- Put temper into the hot oil, first fry raw papaya for 3-4 mins then add rest of vegetables except eggplant. Add salt and turmeric powder.
- Fry all vegetables till 80 percent tender in medium heat..avoid burning of veggies, sprinkle water in the interval. Add eggplant and add hot water for gravy.Cook in high flame for some time then add milk, salt, sugar, fried bitter gourd and fried dumplings. Before switch off flame put 2 spoon ghee and bhaja masala and closed the lid for 15 mins.
- Serve this delicious sukto with steamed rice.
