It is a very, very, very, famous sweet dish popular in Kendrapara district of Odisha.
Instructions to make Rasabali:
- Knead chenna (cottage cheese) with semolina, all-purpose flour, sugar, 1/4 tsp cardamom powder and pinch of baking soda till it is soft and smooth dough.
- Divide the mixture into equal portions and shape each into flatten tikkis. Keep aside.
- Now another side, Pour milk to a heavy bottom pan and boil. Reduce the flame to medium. Stir and prevent the milk from scorching the bottom.Now add sugar, cardamom powder and saffron to the milk.
- While stirring continuously, boil until the milk thickness and reduces to half the quantity.
- Take oil in a pan let it heat. Add the flattened tikkis into the hot oil, fry on medium heat until golden brown both sides. Remove and immediately drop into the hot milk.
- Once all the deep fried paneer tikkis are added, then off the flame.
- Garnish with almonds flakes and saffron. Leave for some time to let the paneer tikkis soaked the milk.
- Serve warm and chilled.
